Hello my darlings! I’m afraid the food I’ve been eating this week hasn’t been nearly as exciting as it was in Mexico, but I have plenty of
gratuitous delicious food pictures to share.
My go-to breakfasts have definitely been yogurt bowls:
With cereal, bananas, pb and chia seeds. Classic.I’ve also had this salad nearly every day:
Salad with tomatoes, grilled chicken, crispy roasted brussel sprouts and greens all tossed with garlic onion dressing.
Also, can we take a second to appreciate how I’ve been eating my salads lately?

Easy Copycat Starbucks Turkey Bacon Breakfast Sandwich
-1 Whole Wheat British Muffin from Trader Joe’s (get this brand, trust me)
-1 or 2 strips turkey bacon (I used TJ’s uncured)
-1 or 2 slices cheddar cheese
-1/3 cup egg whites or 2 eggs
-Salt, pepper, garlic powder
1) Heat a skillet with a little olive oil
2) While you’re waiting for it to heat, spray a microwave safe dish with cooking spray and mix in your eggs and spices. Cook in the microwave for 1 minute. (It will make the perfect little egg patty for sandwiches!)
3) Cook your bacon to the desired crispiness.
4) Toast the bread with cheese and assemble everything once it’s done!
Hits the spot.
